Tex-Mex Smothered Chicken Bake

A one-pan meal at it's finest, this Tex-Mex Smothered Chicken Bake is a crowd pleaser! It's simple, delicious, and loaded with all the best from the Southwest!

Ingredients
  

  • 3 boneless skinless chicken breasts (leave whole or cut in half for a quicker cook time)
  • 1 can diced roasted tomatoes
  • 1 can diced green chilies
  • 1 C roasted corn (frozen or canned)
  • 1 can black beans (rinsed and drained)
  • 1 green bell pepper
  • 1/4 red onion
  • 1 bag instant brown rice
  • 2 Tbsp lime juice
  • 1 C Mexican Mixed Cheese Blend
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste salt

Avocado Crema

  • 1 Avocado
  • 1/2 C plain greek yogurt
  • 1 Tbsp lime juice
  • 2 Tbsp water
  • to taste salt and pepper

Instructions
 

  • In a 9x13 casserole dish, layer brown rice in the bottom. Pat chicken dry and nestle on top of the brown rice (optional step - cut chicken breasts in half to save cook time). Season chicken with cumin, paprika, garlic powder, and salt.
  • In a separate bowl, toss all produce (pepper, corn, onion, and beans, tomatoes, and chilies) with lime juice and a hint of salt.
  • Spoon the veggie and bean mixture over the top of the chicken and rice, covering all chicken and wedging between/around them.
  • Bake at 375 for 55-65 minutes (about 45 minutes for cut in half chicken breasts). When chicken is cooked through, top with cheese and cook another 5-10 minutes to melt.
  • Serve smothered chicken and rice with a garnish of cilantro, avocado, and my homemade light avocado cream sauce for dipping (or drizzling)!

Avocado Crema

  • In a bowl, mash avocado until mostly smooth. Stir in greek yogurt, water, lime. Add more water to desired consistency (more water takes it from a fluffy dipping sauce to a drizzle)
  • Once your desired consistency is reached, add salt/pepepr to taste! Serve with chicken as a dip or as a drizzle over the top!
