- 1 can (10 oz) marinated quartered artichoke hearts
- 2 C frozen spinach
- 3 C shredded parmesan
- 8 oz sour cream (1 C)
- 1/4 C milk
- 8 oz cream cheese (1 block - lowfat or nonfat works fine!)
- to taste salt & pepper
Drain artichoke hearts. In a medium sized slow-cooker, add all ingredients and stir to combine. Save a bit of cook time by chopping the cream cheese into 1-2" pieces.
Cook on Low for about 2 - 2.5 hours (until ingredients are melted and smooth). Turn to warm and add salt/pepper to taste as well as any extra milk if you would like a more creamy consistency. Leave on warm as you serve it! If at any point it begins to get too dry or thick, simply add a bit more milk to bring it back to life!
