- 4 C frozen roasted corn (~1 bag)
- 1/2 green bell pepper
- 1/4 red onion
- 2 Tbsp apple cider vinegar
- 2 Tbsp lime juice (~1 large squeezed lime)
- 1 Tbsp sugar
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- to taste salt
- Garnish cilantro or green onion
Finely chop pepper and onion.
Toss all ingredients in a bowl and stir to combine. Add seasoning to taste.
Garnish and serve! Best to serve after about 10 minutes when juices have set into veggies and corn is no longer frozen.
