Easy Cranberry Apple Crisp

- 5 Granny Smith apples
- 1 c cranberries fresh or frozen
- 1/4 c white sugar
- 1 tsp cinnamon
Oat Crumble Topping
- 1 c oats
- 3/4 c brown sugar
- 1/4 c flour
- 1/2 c butter softened/room temperature
- 1/2 tsp sea salt
- 1 tsp cinnamon
Preheat oven to 350 and grease an 8x8 (or similar sized) baking dish (I used a 10” cast iron skillet)
Peel and chop apples into 1/4” - 1/2” slices. Pour into greased baking dish along with cranberries, 1 tsp cinnamon, and white sugar.
In a separate mixing bowl, fold together oats, sea salt, 1 tsp cinnamon, flour, and brown sugar with the softened butter, using a rubber spatula to incorporate all ingredients to a crumble (could also use the paddle attachment of a stand mixer).
Sprinkle the oat crumble evenly over the top of the apples in the pan.
Bake at 350 for 45-50 minutes. Cool & serve with a scoop of vanilla ice cream. Enjoy!
