Easy Cranberry Apple Crisp

Tender, baked apples meet cranberries in this festive spin on a classic Fall favorite! This Easy cranberry apple crisp is simple, quick, contains minimal ingredients, and can out-preform any apple pie on your Holiday table!

Ingredients
  

  • 5 Granny Smith apples
  • 1 c cranberries fresh or frozen
  • 1/4 c white sugar
  • 1 tsp cinnamon

Oat Crumble Topping

  • 1 c oats
  • 3/4 c brown sugar
  • 1/4 c flour
  • 1/2 c butter softened/room temperature
  • 1/2 tsp sea salt
  • 1 tsp cinnamon

Instructions
 

  • Preheat oven to 350 and grease an 8x8 (or similar sized) baking dish (I used a 10” cast iron skillet)
  • Peel and chop apples into 1/4” - 1/2” slices. Pour into greased baking dish along with cranberries, 1 tsp cinnamon, and white sugar.
  • In a separate mixing bowl, fold together oats, sea salt, 1 tsp cinnamon, flour, and brown sugar with the softened butter, using a rubber spatula to incorporate all ingredients to a crumble (could also use the paddle attachment of a stand mixer).
  • Sprinkle the oat crumble evenly over the top of the apples in the pan.
  • Bake at 350 for 45-50 minutes. Cool & serve with a scoop of vanilla ice cream. Enjoy!
