The promise of summer is upon us! While it may still be snowing outside, we can begin to sprinkle hints of warmer weather around our home in the form of florals, scents, and food! The fresh zesty corn dip recipe I share with you today is perfect for all occasions from the super bowl to taco night on a hot summer day.
When prepping for a party (or taco bar), I gravitate towards simple recipes. The kind that allow me to spread my energy toward a variety of dishes to serve! Because who wants to spend all their time on one dip when hosting? That’s one reason I love this recipe – it is simple as can be & ready in moments! And in my experience, it’s always a hit!
Making the Fresh and Zesty Corn Dip
The ingredients are simple! Here’s what’s in it:
Corn
Green Bell Pepper
Red Onion
Apple Cider Vinegar
Lime Juice
Sugar
Paprika/Garlic
I like to garnish the dip with chopped cilantro or green onion, but the minimal ingredients listed above bring enough magic as is! I think it’s the way the flavors compliment each other – and the light and fresh corn canvas perfectly unites them.
What’s wonderful about this versatile recipe – you can use it as a stand alone dip or a salsa! It compliments a table of guacamole and queso, but equally completes a taco bar with all the fixin’s! Serve it for game day with chips to please everyone on the couch, or set it out as a topping for your chicken street tacos! And then there’s secret option #3… it is a salad and can easily be enjoyed with nothing but a fork for a light and healthy snack!

My husband’s worst quality – he hates cilantro. He is otherwise perfect! (ha ha ha…). But he does – hate cilantro – and it puts many restraints on my kitchen endeavors. Because, you see, I love cilantro. So what’s a good wife to do? I guess lovingly (begrudgingly) omit it from all recipes in the name of love and sacrifice. All this to say, I have substituted chopped green onion as my “garnish” of choice, but this dip is made even better with fresh chopped cilantro. If you, like me, have a cilantro hater in your dwelling, 1) I see you and feel your pain, you are not alone. 2) you can still make a delicious and vibrant fresh zest corn dip without the prized ingredient. Green onion isn’t a magic touch, but it add a little somethin!

Fresh Zesty Corn Dip
Ingredients
- 4 C frozen roasted corn (~1 bag)
- 1/2 green bell pepper
- 1/4 red onion
- 2 Tbsp apple cider vinegar
- 2 Tbsp lime juice (~1 large squeezed lime)
- 1 Tbsp sugar
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- to taste salt
- Garnish cilantro or green onion
Instructions
- Finely chop pepper and onion.
- Toss all ingredients in a bowl and stir to combine. Add seasoning to taste.
- Garnish and serve! Best to serve after about 10 minutes when juices have set into veggies and corn is no longer frozen.
