Biscuits & Gravy – A Midwestern & Southern Staple
I can’t remember the first time I tried biscuits and gravy, probably in the “ala cart” breakfast line at school. But I remember when I fell in love with the dish. Matt and I moved back to his stomping grounds in Texas shortly after college and a once “okay” dish became a favorite – and a weekend staple!
Maybe I just never had tried it homemade. In fact, I’ve since learned that biscuits and gravy can ONLY be enjoyed in one capacity… homemade.
A dish commonly enjoyed for breakfast in the Midwest and South, there’s something so comforting about a creamy and delicious sausage gravy smothering a plate of fluffy butter biscuits.
Easy and Quick to Make!
One of the many reasons I love this breakfast recipe is it’s ease! For such a delicious recipe, it is shockingly quick and simple. In fact, you probably already have all of the (very few) ingredients needed!
All you need to make sausage gravy are the following ingredients:
- Flour
- Butter
- Milk
- Sausage
Just these four things and a little bit of cracked black pepper is all you need to make this delicious comfort food!
As for biscuits, I always recommend you make them yourself! I love Joanna Gaines Biscuit recipe from her magnolia cookbook. But, I always keep some quick frozen drop biscuits in the freezer for a last minute breakfast option! You can also shortcut this meal with some good ‘ole biscuits in a can. We over at the Brown residence are not above that one bit!
How to Make the Easy Homestyle Sausage Biscuits and Gravy
The entire process of making sausage gravy will take you no more than ten minutes. It is quick and so very simple! Here’s how you do it:
- In a non-stick skillet or pot, brown your sausage over medium heat. Once cooked through, drain and discard most of the grease (reserve a little in the pan for added flavor).
- Press the sausage to the perimeters of the skillet, leaving about a few empty inches of space in the center.
- Drop your butter in the center of the pan and bring to a simmer. Once it begins to simmer, whisk in flour and toss together with the sausage, coating it and doing your best to evenly distribute.
- Pour in your milk and stir occasionally as you wait for it to return to a simmer.
- Once you reach a simmer, stir for a minute or so until the gravy thickens to your preference! Taste test and add pepper/additional seasoning to your liking!
It really is that easy!
Trouble-Shooting your Sausage Gravy
It really is tough to mess up this simple recipe, but a common issue (and one I’ve experienced) is when the gravy thickens too quickly. This can result in gravy that is too thick to “pour” over your biscuits… but the fix couldn’t be easier!
If your gravy is too thick, simply add more milk. Add more milk until you have achieved your desired consistency. That’s really all there is to it!

Easy Homestyle Sausage Biscuits and Gravy
Equipment
- Nonstick Skillet or Pot
Ingredients
- 1 lb Ground Pork Sausage
- 3 tbsp butter
- 3 tbsp flour
- 2 1/2 c milk (add more at the end to desired consistency)
- to taste cracked black pepper
Instructions
- In a nonstick pan over medium heat, brown your sausage. When cooked through, drain the majority of the grease and discard, but leave a small amount in the pan for added flavor.
- Press the cooked sausage to the perimeter of the pan, leaving a few inches of space in the center. Add butter and bring to a simmer over medium heat.
- Once butter has melted and is simmering, whisk your flour into the butter, then toss it together with the sausage to coat and evenly distribute.
- Add milk and stir. Bring the milk to a simmer, stirring occasionally. Once it begins to boil, you'll notice it quickly becoming thicker. Remove from heat once your desired thickness is reached (this happens quickly so keep your eyes on it)! If your gravy thickens too quickly or you'd like it to be a little more runny, stir in more milk (about 1/4 – 1/2 cup at a time).
- Taste test and add cracked black pepper! It should not require any salt or seasoning, but you can always add a bit of salt for added flavor. Serve over your favorite warm buttermilk biscuits!
