Summer is better with fresh, light, crisp healthy salads to snack on during hot days! If you’re looking for something easy and delicious to add to your summer menu, this broccoli grape summer salad is it! It takes no time to prep, is easy to store, and loaded with nutrients!
What makes this Broccoli Grape Summer Salad better than others?
I’ve always loved broccoli salad, but the kind you find at salad bars and restaurants always felt a little “off”, like something’s missing. One day, I put my finger on it… it needed more “crisp”! The heavy weight of the mayo and overabundance of creamy dressing weighed it down far too much and robbed the salad of the “fresh and crisp” appeal that I craved. So, I set out to make my own and the BEST EVER broccoli grape summer salad was born! With a much lighter, more tangy dressing and added crisp fruits/veggies, this broccoli grape summer salad has everything you crave in flavor and texture!
What’s in it?
The recipe is made of two parts: the dressing and the chopped produce. Normally, broccoli salad (aka “broccoli slaw”) is swimming in a heavy, primarily mayo-based dressing. This was the first thing I had to change! I prefer something more light and vibrant tasting that will allow the crisp fruits and veggies to maintain their crisp integrity! Here’s what’s in the dressing:
Salad Dressing Ingredients:
- apple cider vinegar
- olive oil
- mayo
- dijon mustard
- lemon juice
- honey
Broccoli Grape Summer Salad Ingredients
- broccoli
- green pepper
- grapes
- red onion
- sunflower seeds
- almonds
- mixed italian cheese
- optional bacon
How to Prepare the Broccoli Grape Summer Salad
Perhaps the best part! This salad is SO easy to prepare, and frankly, therapeutic. Here are the three simple steps involved:
- Whisk the dressing ingredients together in a large mixing bowl.
- Chop produce – broccoli (including stalk), green pepper, grapes, red onion.
- Toss produce, seeds, nuts, and cheese together with the prepared dressing in the mixing bowl!
… it’s that easy! This is a really fun recipe to make with the kids because since it is so simple, it’s quick and nearly impossible to mess up! And the added bonus is that your kids may nibble on the nutrient rich ingredients along the way (like mine do)!
