If there’s one item you will always find on my Thanksgiving table, it’s a sweet and comforting cornbread casserole! Cornbread casserole has always been my favorite side dish of Thanksgiving and for some reason I feel alone in this (green bean casserole’s always stealing the limelight it seems…) but today is for my fellow cornbread casserole lovers! I know you are out there and I’m here to deliver the most INCREDIBLE recipe of sweet, savory, and fluffy comfort food (and SUPRISE… it’s healthy-ish too). Today I bring you a healthy honey cornbread casserole recipe that tastes like pure guilt without any of it! Not than it needs to be healthy – I’m all about indulging on the holidays – but having a “healthy-ish” dish on my table makes me feel a little better about consuming those 1,000,000 pieces of pie I will inevitably enjoy later.
But before I get to the recipe, I need to address a Thanksgiving table struggle that this dish will help alleviate. This year will mark the third time we have hosted Thanksgiving at our house. While certainly not a pro, I can tell you that the biggest challenge I’ve faced is having all dishes arrive WARM to the table on time for dinner. It really is a puzzle and I feel like a magician when I have successfully executed this challenging feat! That’s one big reason I love this honey cornbread casserole recipe – it’s just so easy and flexible (and for my novice chefs out there, it is virtually impossible to screw up)! Need to leave it in the oven a few more minutes? Go ahead, it’ll survive! Need to take it out and make room for more? No problem, cover it with foil and set it aside until it’s time to set the table! This casserole doesn’t require being “straight out the oven” in order to be enjoyed and takes little time (and effort) to prepare.
Now that I’ve rambled enough for a simple recipe blog post, let’s get right to the main event! Sorry to disappoint if you are still engaged in reading this and haven’t scrolled down to get the recipe by now… please understand that there’s really only so much to say about cornbread casserole. BUT, that doesn’t make this recipe any less AMAZING! Now without further adieu… I bring to you with good tidings and great joy my Healthy Honey Cornbread Casserole recipe!

Honey Cornbread Casserole
Ingredients:
- 3 Tbsp melted butter
- 1 C Plain Greek yogurt
- 1 can whole kernel corn (drained)
- 1 can creamed corn
- 1 large egg
- 2 Tbsp honey (that is equivalent to squeezing the bottle for 10 seconds)
- 1/2 tsp garlic powder
- 1/2 tsp pumpkin pie spice
- Few dashes of salt & pepper
- 1 1/2 C Cornbread mix (1 box jiffy or Bob’s red mill gluten free)
Directions:
- Preheat oven to 400 and grease a casserole dish (I use 9×9 or 11×7)
- Combine all ingredients into mixing bowl and stir/beat until fully incorporated.
- Pour contents into greased casserole dish and place in the oven!
- Bake for 20-25 minutes. The bigger the dish, the less time you will need to cook and the thinner the casserole will be!
- SERVE and ENJOY!
