It’s the week after Christmas and all I want is something lean. But it’s also snowing outside, so soup sounds good. Certainly I’m not the only one with these thoughts this time of year! If you are also looking for a meal that is equally cozy and healthy, look no further! My creamy crockpot chicken tortilla soup is here to meet your winter needs.
Chicken tortilla soup is generally pretty lean by nature. Traditionally a both-based soup sprinkled with varieties of peppers and chicken, this soup is already a winner! But my creamy crockpot chicken tortilla soup is different – and better – for a few reasons. Allow me to elaborate…
What sets this chicken tortilla soup apart
First, it is creamy. And not just just a texture-enhancing creamy, but a deliciously cheesy creamy. I use fraction of a block of low-fat cream cheese to achieve the flavor and texture I crave, and I’m proud to say it’s to die for!
Second, it ties in a unique combination of vegetables. Not just your typical peppers, onion, and tomatoes in this one! I carefully curated this recipe to embody the light and vibrant flavors I love to contrast the cozy creaminess. Further giving this soup that “has it all” factor!
The third and final reason? It’s a dump – and – sit soup! No need to cook anything ahead of time, simply dump it into the crockpot anytime during the day and let it cook until dinnertime! Not only is it easy to prepare, but it is not finicky in the slightest. You can throw it in the crockpot before you leave for work in the morning or in the middle of the day and it will still be ready and delicious by the time you sit down at the table!
Garnishing the Soup
I’m sharing this recipe in it’s raw, un-dressed form, because the flavor alone doesn’t require any assistance! That being said, this is the perfect soup to prepare for a crowd and is nicely complimented with a bar of optional garnishes! Here are a few of my favorite garnishes for this soup:
- lime wedge
- avocado
- mixed cheese
- hot sauce
- cilantro
- tortilla chips
As mentioned above, this soup is ideal for a crowd! It’s always a favorite for our bachelor-watch parties because it’s hot and ready for seconds – or thirds – whenever you want to get up off the couch! As is the case for most crockpot meals… which is precisely why I’m privy to them. That being said, this soup could also be made on the stove at the time of serving with one adjustment – use pulled rotisserie chicken (or any form of cooked chicken).

Creamy Crockpot Chicken Tortilla Soup
Equipment
- Crockpot
Ingredients
- 4 cups chicken broth
- 2-3 chicken breasts uncooked
- 1 can diced roasted tomatoes
- 1 can diced green chilies (small can)
- 1 cup frozen corn
- 1 cup frozen diced tomatillos (can sub more diced tomatoes or omit)
- 1/4 cup chopped red onion
- 4 oz lowfat cream cheese (1/2 block)
- 1 Tbsp chili powder
- 1 tsp garlic powder
- to taste Salt+ Pepper
Instructions
- Pat chicken dry and throw all ingredients (sans cream cheese) into the crockpot.
- Cook on high for 4-6 hours (or low for 6-8+) until chicken is easily shredded with a fork.
- Shred chicken with a fork and add cream cheese. Turn to warm and allow cream cheese to fully melt and incorporate (about 30 more minutes).
- Add more seasoning to taste and garnish if desired! I like a lime wedge, avocado, mixed cheese, and cilantro!
