And there’s no need to explain why! This delicious and vibrant green salsa is a nice bridge between chunky, spreadable guacamole and pourable salsa. It has all the delightful, spicy notes as a traditional salsa with an added creamy texture from the avocado.
Not only is it an excellent bridge between guacamole and regular salsa verde, it also lasts longer than guacamole when stored! The high acidity of the tomatillos and lime juice keep the avocado nice and fresh when incorporated. This means that the avocado will take much longer to oxidize (brown) than guacamole typically would! Ideal for storing in the fridge, you can make a batch of this early in the week and enjoy it all week long!
Roasting the Tomatillos and Peppers
The depth of flavor in this salsa recipe comes from the charred smokiness of the ingredients! This is achieved by quickly roasting the tomatillos and peppers. If you like your salsa to have a kick, go ahead and leave the peppers out of the oven and incorporate them raw into the salsa. However, my preference is to roast them right along with the tomatillos!
To prepare the perfect roasted tomatillos and peppers for this salsa, you’ll want to start by preheating your oven to 400. Peel and quarter your tomatillos, as well as your peppers. Remove the ribs and seeds of the peppers for a more mild flavor (recommended)! Then, toss with a bit of olive oil, salt, and garlic powder and allow to roast in the oven for 15-20 minutes! Take it out at 15 minutes if you don’t like so much char on your roasted veggies. The roasted ingredients can then be immediately incorporated with the remaining ingredients and served right away for a warm, authentic bite!
How to Serve the Avocado Salsa Verde
Another great thing about this guacamole – salsa hybrid, you can dip it, pour it, or spread it! It tastes wonderful atop tacos or nachos, makes an excellent dip, and can also be drizzled over chicken, fish, or steak. And not just those, you could even spread it on some toast with egg to make a charged up avocado toast for breakfast! There are so many fun and versatile ways to put this delicious avocado tomatillo Salsa Verde to use.
What’s in the Avocado-Tomatillo Salsa?
Below is a list of ingredients you’ll need to prepare this delicious dip, but first I want to brag about a little secret ingredient I discovered! Often, salsa (of any kind) incorporates a little but of sugar. This is in an effort to balance the acidity of the tomatillos and peppers. Typically, I use a tablespoon or two of sugar to accomplish this, but this time around I tried something new!
This salsa verde is “balanced” not with refined sugar, but with natures sugar – fruit! In keeping with the green-ness of the salsa that is characteristic of the dip, I wanted to to use a green fruit. That being said, I already have so much flavor in the dip already. So, the green fruit should not much alter the flavor, but compliment the finish only. I found that green grapes perfectly accomplish everything I needed it to! And I think they add a little something to it, too!

- Tomatillos
- Avocado
- Jalapeno
- Cilantro
- Lime
- Grapes
- Garlic
- Shallot
- Paprika
- Salt

Avocado Tomatillo Salsa Verde
Equipment
- blender or food processer
Ingredients
- 7-8 Tomatillos medium sized
- 2 Jalapenos
- 1 Avocado large (or two small)
- 1/4 C Cilantro
- 2 tbsp Lime juice fresh squeezed
- 1/4 C Green Grapes
- 1 1/2 tsp Garlic minced
- 1/2 shallot
- 1/2 tsp paprika
- dash olive oil
- to taste salt
Instructions
- Preheat the oven to 400 while you rinse and quarter tomatillos and peppers. Remove ribs and seeds of peppers. Toss with a bit of olive oil, salt, and garlic powder and arrange on a baking sheet.
- Roast your tomatillos and peppers at 400 for 15-20 minutes (20+ mins being more charred, 15 mins being just shy of charred).
- Meanwhile, throw all other ingredients into a blender – avocado, cilantro, lime juice, grapes, shallot, garlic, salt, and paprika – wait to blend until your tomatillos and peppers are ready!
- Remove tomatillos and peppers from oven and pour them directly into the blender with the other ingredients (including juices in the pan). Blend for about 20-30 seconds (less for chunkier salsa, more for runnier). Add more salt to taste!
- Pour and serve immediately as a dip, drizzle over tacos, or alongside any meal! Enjoy!
